Corn and Bean Tacos
Ingredients:
Two cobs of corn
Two can of chili beans
One green pepper - finely chopped
Half a white onion - finely chopped
One clove of garlic - grated
Juice from 1 lime
Head of Romaine - finely chopped
1 tomato - finely chopped
Favourite Taco Topping (toffui sour cream, mango salsa etc)
Favorite taco seasoning
Instructions:
- Cut corn off cob
- Chop onion and green pepper
- Put onion, corn and green pepper in a bowl with garlic
- Turn frying pan on medium-high
- When frying pan is hot add half a cup of water
- Place bowl of veggies in frying pan stir for about 5 to 7 minutes
- Add chili beans do not rinse, mix together
- Add juice one lime into the frying pan
- Add favorite taco seasoning
- Turn heat down to low and let simmer for 10 minutes while stirring occasionally
- Shred romaine lettuce and chop tomato
- Fill taco shell with bean and corn mixture, top with lettuce and tomato, top it off with favourite taco toppings
- Enjoy!
